Chicken Rice is one of the most popular dishes in the Malaysian Chinese culture.


From the famous Hainan Chicken Rice to steamed to roasted to barbequed chicken. Chicken Rice in Malaysia is not only available in many Chinese coffee shops or restaurants or street hawker stalls, but also chain restaurants and specialized F&B outlets. Most of the Chicken Rice is served with sliced cucumber, normally served with homemade chili sauce and pounded ginger or garlic and dark soy sauce, There are different variants of rice as well, including the aromatic and tasty Hainanese yellow ‘oily rice’. Chicken rice can be accompanied with a bowl of soup and additional chicken intestines and so on.



Let's get started, are you ready...? in this Chicken Rice we will be making .... ,


  • Rice

  • Chicken

  • Soup

  • Red Chili Dip




INGREDIENTS :

For rice making


  • 3 cups of rice, washed and drain aside ( Basmathi preferred)

  • 4 tbs butter

  • 1 tbs ghee oil -optional

  • 2 cups of chicken broth

  • Salt to taste

  • 1 cinnamon stick

  • 1 star anise

  • 2 of Pandanus leaves

To blended :

  • pinch of ginger

  • 3 cloves garlic

  • 1 big red onion


For chicken making :

  • Chicken preferably (breast or rib) without bones, but always at your choice

  • 2 big thumb of ginger

  • 5 stick of lemon grass

  • 4 cloves of garlic

  • Salt to taste


For sauce dip :


  • 2 red tomatoes

  • 5 red chili (unseeded)

  • 3 clove of garlic

  • 2 tbs white vinegar

  • 2 tbs of sugar

  • Salt to taste

  • 1 tbs chilies sauce

  • 1/2 cup of water

Instruction:

1. In the blender add as above ingredients and blend finely


2. In a pot, pour the blend mixture and stir well for at least 10 minutes simmer in low heat.

Ready to served.



For the rice cooking

1. Heat the ghee and butter in a wok together with pandanus leaves, star anise and cinnamon till fragrance.

2. Lastly, add blended paste into the wok, stir well. Transfer the rice mixture to rice cooker.


3. Once transferred, add chicken broth, and salt into rice mixture. Cook according to rice

cooker's manual instruction.

For the chicken marinate

1. Ginger, garlic and lemon grass put into mixer to coarse blend.


2. Place the chicken into a bowl with blend mixture, add a bit of salt and pinch of turmeric powder. Lets marinate at least for 45 minutes.


3. Heat the cooking oil into a wok and fried till golden brown or else you can choose to bake in the oven instead.


For the chicken soup

  • 4 cloves garlic

  • 1 thumb ginger

  • water to cover

  • salt and pepper to taste

  • 1 teaspoon chicken bouillon granules (optional)

  • Spring onions or coriander leaf for garnish

  • 1/2 tbs black pepper

  • 1 tbs cooking oil

  • 3 cups of water

Instruction

  • Heat the pot with cooking oil and smashed ginger and garlic till fragrance then add black pepper, stir well and add water also chicken broth then put carrots, and on in a large soup pot and cover. Heat and simmer, uncovered, until the carrots soft with pinch of salt. Stir together and serve with coriander.




Serve rice and chicken along with fresh slices of cucumber and lettuce accompanied with chilli sauce and a bowl of soup.
